Cottage food producer food safety training

This advanced course will give you a working understanding of important food safety concepts, practices and skills you need to take full advantage of the Minnesota Cottage Food law.

It covers processing methods for drying, baking, confections, jams and jellies, canned acid and acidified fruit and vegetables and fermentation. You will learn how to produce, package, label, store, and transport a safe food product. You will also learn how to do in-house testing for pH and water activity to help you develop your own recipes, and have access to food safety experts to answer your questions.

By completing this course, you will meet the Tier 2 training requirement of the Minnesota Department of Agriculture to register as a cottage food producer which allows you to make sales up to $78,000 annually.
